- 2 c. milk
- 1/2 c. sugar
- 2 Tbsp. flour
- 2 Tbsp. cornstarch
- 2 large eggs, separated
- 1 Tbsp. butter
- pinch of salt
- 1 1/4 c. coconut
- 1 tsp. vanilla
Directions

1Scald 1 1/2 cups milk in top of double boiler.

2Combine sugar, flour, salt and cornstarch.

3Stir in remaining milk and egg yolks.

4Stir this flour mixture into hot milk.

5Cook until thick.

6Remove from heat; add butter, vanilla and 3/4 cup coconut. Allow mixture to cool.

7Pour into pie shell; cover with remaining coconut and meringue.

8Bake at 350° for 10 to 12 minutes, until meringue browns lightly.
