Coconut Cream Pie

- 1 c. sugar
- 2 c. milk
- 3 egg yolks, beaten
- 3 Tbsp. cornstarch
- 1/4 c. butter
- 1 tsp. vanilla
- 1 c. flaked coconut
- 1/4 tsp. salt
- 9-inch pie shell, baked
- 1 c. heavy cream
Directions

1Heat sugar and milk in a 1 quart saucepan over medium heat. Blend egg yolks and cornstarch.

2Add small amount of hot milk to yolk mixture.

3Mix well and return to the hot milk.

4Boil until thick, about 3 minutes.

5Remove from heat; add butter, vanilla, coconut and salt.

6Stir until butter melts.

7Cool.

8Pour mixture into pie shell.

9Whip and sweeten cream; spread over pie.

10Garnish with grated coconut.

11Serve chilled.
