Coconut Cream Pie

- 2 c. milk, scalded
- 2/3 c. sugar
- 1/4 c. cornstarch
- 1/4 tsp. salt
- 1/3 stick butter
- 3 eggs
- 1 tsp. vanilla extract
- 1/2 c. coconut (more if you like)
Directions

1Mix sugar, cornstarch and salt in top of double boiler.

2Add milk; when slightly thickened, add a little to beaten egg yolks. Return egg yolks back to the mixture and cook until it's the right thickness.

3Remove from heat and add vanilla, butter and coconut. Let cool and put in precooked pie crust.

4Add meringue; top with coconut and brown in oven.
