- 1 c. sugar
- 1/4 c. flour
- 2 egg yolks
- 2 c. milk (I use 1/2 c. Pet milk and 1 1/2 c. whole milk)
- 1/2 stick margarine
- 1 tsp. vanilla extract
- 1 (6 oz.) pkg. frozen coconut
Directions

1Blend together sugar and flour.

2Beat egg yolks.

3Add a little milk to them.

4Add this to sugar and flour.

5Add remainder of milk and stir well.

6Add margarine.

7Place in large microwave bowl and cook in microwave on High for 2 minute intervals until thick. Stir well between cooking intervals.

8When thick, add vanilla and coconut. Pour into baked 8-inch pie shell.
