Coconut Cream Pie

Ingredients

  • 2/3 c. sugar
  • 1/2 tsp. salt
  • 3 egg yolks, slightly beaten
  • 1 Tbsp. butter
  • 3 Tbsp. cornstarch
  • 3 c. milk
  • 1 1/2 tsp. vanilla

Directions

    Mix dry ingredients together and then add the milk and slightly beaten egg yolks and stir well.

    Cook until thickened and stir constantly so it won't stick to the bottom of the pan.

    Fold in 3/4 cup moist shredded coconut just before you fill the baked pie shell.

    Sprinkle whip cream or meringue topping with 1/4 cup coconut.
