- 3 c. milk
- 3 egg yolks
- 1 c. sugar
- 4 Tbsp. cornstarch
- 1 c. coconut (reserve 1/4 c. for topping)
- 2 tsp. vanilla
- 1 Tbsp. butter
- cold water
- baked pie crust
Directions

1Mix eggs, sugar and cornstarch together with enough cold water to make paste.

2Heat milk to boiling.

3Add egg mixture and cook until thick.

4Remove from heat and add 3/4 cup coconut, butter and vanilla.

5Pour into pie crust and top with meringue and remaining coconut.

6Bake at 300° for 20 minutes.
