- 1 c. sugar
- 3 eggs
- 1 c. evaporated milk
- 1 c. plus 3 Tbsp. water
- 5 Tbsp. flour (self-rising)
- 1/2 c. coconut
- 1 Tbsp. vanilla
Directions

1Separate eggs (reserve whites for meringue); put egg yolks in double boiler or heavy saucepan.

2Stir until smooth; add sugar, 2 tablespoons water and 5 tablespoons flour.

3Continue to stir until smooth; add evaporated milk, water and coconut.

4Stir until well blended.

5Cook over medium heat until thick.

6Stir often while cooking.

7Add vanilla; mix and pour into baked pie shell.
