- 3/4 c. sugar
- 1/3 c. all-purpose flour
- 1/4 tsp. salt
- 2 c. milk
- 3 slightly beaten egg yolks
- 2 Tbsp. butter
- 1 tsp. vanilla
- 1 (9-inch) baked pastry shell
- 1 1/3 c. coconut
- meringue
Directions

1In saucepan, combine sugar, flour and salt.

2Gradually stir in milk; cook and stir over medium heat until bubbly.

3Cool and stir 2 minutes.

4Remove from heat.

5Stir small amount of hot mixture into yolks; immediately return to hot mixture.

6Cook 2 minutes, stirring constantly.

7Remove from heat.

8Add butter and vanilla. Add 1 cup of coconut.

9Pour into cooled baked pastry shell.

10Top with meringue.

11Sprinkle with 1/3 cup of coconut.

12Bake at 350° for 12 to 15 minutes.

13Cool.
