- 4 Tbsp. sugar
- 5 Tbsp. flour
- 1/4 tsp. salt
- 2 c. milk
- 3 egg yolks, beaten
- 1 c. coconut
- 2 tsp. vanilla
- 1 pie shell
- 4 Tbsp. sugar
- 1/2 c. coconut
- 2 egg whites
Directions

1Preheat oven to 350°.

2Combine sugar, flour and salt.

3Add milk and egg yolks.

4Mix well.
-
5Cook 10 minutes in a double boiler, stirring constantly until thick.

6Add coconut and vanilla. Let cool.

7Put into pie shell.

8Beat egg whites; add sugar and beat until egg whites stand in peaks.

9Spread over top of pie. Sprinkle coconut on top and bake at 350° for 15 minutes or until light brown.
