Coconut Cream Pie

- 1 can evaporated milk (14 oz)
- 1 c water or regular milk
- 1/2 c sugar
- 1/8 tsp salt
- 5 Tbsp flour
- 12 oz coconut (1 cup)
- 3 egg yolks
- 3 egg whites
- 1/2 tsp cream of tartar
- 3 Tbsp sugar
- 1 tsp vanilla
- 2 baked pie shells
Directions

1Pour milk (& water or regular milk) into saucepan, heat to almost boiling.

2Mix sugar, flour, egg yolks vanilla salt -add to hot milk, stirring till mixture thickens.

3Add coconut. Pour into 2 baked pie shells.

4For meringue, beat egg whites until peaks form.

5Add 3 Tbsp sugar and 1 tsp vanilla.

6Beat 2 minutes. Spread on custard in pie shell.

7Sprinkle with more coconut.

8Brown in 350 degree oven.
