Coconut Crumb Cake

- 2 1/4 c. flour
- 1 c. sugar
- 3/4 c. butter
- 1 1/2 c. flaked coconut
- 1/2 tsp. salt
- 1 tsp. cinnamon
- 1/2 tsp. cloves
- 1 egg
- 1 c. buttermilk
- 1 tsp. soda
Directions

1In mixing bowl, mix flour and sugar; mix in butter until mealy.

2Mix 1 cup of mixture with 3/4 cup coconut (reserve).

3To the rest of the mixture add 3/4 cup coconut, salt, cinnamon and cloves.

4Stir together the milk and soda; add this to the mixture. Add egg and mix well with spoon.

5Pour into 9 x 13-inch pan. Sprinkle reserved crumb mixture on top.

6Bake in 375° oven for 35 minutes.
