- 1 1/2 cups coconut milk
- 1-2 T red curry paste
- 3 T light brown sugar
- 1 1/2 T soy sauce
- 1/2 T grated ginger
- 1 T chopped cilantro
- 1 T chopped basil
- 1 T lime juice
- 8 oz assorted vegetables like potato, carrot, onion, etc. diced
- 1 cup button mushrooms, diced
- 1 cup frozen green peas
Directions

1Place first 5 ingredients into a medium sauce pan and bring to a boil. Reduce heat and simmer 5 minutes. Adjust the seasoning with cilantro, basil and lime juice.

2Add vegetables, simmer an additional 5 minutes and serve with rice.
