Ingredients

  • 1 1/2 cups coconut milk
  • 1-2 T red curry paste
  • 3 T light brown sugar
  • 1 1/2 T soy sauce
  • 1/2 T grated ginger
  • 1 T chopped cilantro
  • 1 T chopped basil
  • 1 T lime juice
  • 8 oz assorted vegetables like potato, carrot, onion, etc. diced
  • 1 cup button mushrooms, diced
  • 1 cup frozen green peas

Directions

    Place first 5 ingredients into a medium sauce pan and bring to a boil. Reduce heat and simmer 5 minutes. Adjust the seasoning with cilantro, basil and lime juice.

    Add vegetables, simmer an additional 5 minutes and serve with rice.
