  • 3 c. sugar
  • 1 c. milk
  • 6 drops red food coloring
  • 1/2 tsp. cream of tartar
  • 2 (7 oz.) pkg. coconut, finely grated

Directions

    Butter 8 x 8 x 2-inch pan.

    Fold and place sheet of aluminum foil down middle of pan to divide it in half.

    Heat sugar, cream of tartar and milk to boiling in heavy saucepan.

    Let simmer until 230° on thermometer.

    Remove from heat.

    Stir in coconut.

    Spoon half into one side of pan.

    Blend in food coloring into remaining half and pour into other side of pan.

    Chill for 2 to 3 hours. Cut into 1-inch cubes.

    For gifts, alternate colors in apothecary jar.
