Spinach And Lamb Pie

Ingredients

  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 500 g spinach
  • 1 tbsp olive oil
  • 1 medium onion, chopped
  • 250 g minced lamb
  • 150 g feta cheese
  • 1 tsp green peppercorns
  • 75 g puff pastry
  • 2 medium eggs
  • 150 g double cream
  • 1 tsp mixed herbs

    Preheat oven to 325°F.

    Heat the butter and fry half the garlic until soft. Add the spinach and allow to completely wilt. Add a pinch of nutmeg and season to taste.

    Heat oil in another pan and add the remaining garlic and the onion. Add the lamb and fry for about 5 minutes.

    Mix the feta cheese with the peppercorns. Roll the pastry out to about an 11 inch circle and place in a greased 9 1/2 inch baking dish. Fill with the spinach, lamb and feta cheese mixes. Mix together the egg, cream and herbs, pour over the pie and bake for about 35 minutes.
