Coconut Lemon Bars

- 2 c. flour
- 1/2 c. butter or oleo
- 1/4 c. packed brown sugar
- 3 eggs, well beaten
- 2 c. brown sugar, packed
- 1/2 tsp. salt
- 1 c. finely shredded coconut
- 1/2 c. raisins
- 1/2 c. chopped walnuts
- 2 Tbsp. lemon juice
- 1 tsp. grated lemon rind
Directions

1Preheat oven to 350°.

2Measure the flour and mix with butter and 1/4 cup brown sugar thoroughly.

3Press firmly into bottom of lightly greased oblong pan (9 x 13-inches).

4Bake for 10 minutes. Mix eggs, 2 cups brown sugar and salt together thoroughly.

5Stir in rest of ingredients.

6Spread evenly over the partially baked bottom layer.

7Bake about 25 minutes.

8Top will be lightly browned.

9Cut in 3 x 1-inch bars when cool.

10Makes 28 bars.
