- 3 c. sifted flour
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1 c. butter
- 1 lb. (3 1/2 c.) confectioners sugar, sifted
- 4 egg yolks, well beaten
- 1 c. milk
- 1 tsp. vanilla
- 1 c. Baker's shredded coconut
- 4 egg whites, stiffly beaten
Directions

1Sift flour once, measure, add baking powder, salt and sift together three times.

2Cream butter thoroughly, add sugar gradually and cream together until light and fluffy.

3Add egg yolks and beat well.

4Add flour alternately with milk, a small amount at a time, beating well after each addition until smooth.

5Add vanilla and coconut.

6Fold in egg whites quickly and thoroughly.

7Bake in 3 greased 9-inch layer pans in moderate oven, 375°, for 25 to 30 minutes, or use 2 oblong cake pans.

8Spread lemon filling between layers and Seven Minute frosting over the cake.
