Coconut Mousse

Ingredients

  • 1 can coconut milk (400 ml)
  • 1 can condensed milk (300 ml)
  • 1 tsp vanilla extract
  • 1/2 cup hot water
  • 1 1/2 tbsp unflavoured gelatine

Directions

    Pour the coconut milk, condensed milk and vanilla extract into a large bowl.

    Combine together well until smooth.

    Dissolve completely the gelatin in the hot water.

    Gradually pour the water into the cream mixture and mix well.

    Pour the mixture either into individual small cups or into a shallow container.

    Transfer to the fridge and chill intil the mousse has set.

    Decorate with your chosen topping.

    I simply added sprinkled powdered sugar on the mousse.
