- 1 egg, beaten
- 1/2 cup milk
- 1/4 cup oil
- 1 teaspoon vanilla essence
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/2 cup sugar
- 1 cup coconut, grated
- 1 1/2 cups all-purpose flour (maida)
Directions

1Beat egg in a bowl.

2Add milk, oil and essence and blend all well together.

3Stir in the dry ingredients.

4Mix well.

5Spoon into muffin pans.

6Bake at 180C (356 F) for 25 minutes.

7Remove from oven and allow to cool on a wire rack.
