- 1 (9-inch) unbaked pastry shell
- 3 eggs
- 1/2 c. firmly packed light brown sugar
- 1 c. cream of coconut
- 2 Tbsp. butter, melted
- 1 tsp. vanilla extract
- 1 tsp. vinegar
- 1 c. chopped pecans
Directions

1Preheat oven to 350°.

2In medium bowl, beat eggs.

3Add sugar; stir until sugar dissolves.

4Add remaining ingredients; mix well. Pour into prepared pastry shell.

5Bake 30 to 35 minutes or until center is puffed.

6Cool.

7Chill.

8Garnish with whipped cream if desired.

9Refrigerate leftovers.

10One-half cup of flaked coconut may also be added if desired.
