- 1 lb. carrots, scraped and sliced
- 1/2 c. sugar
- 2 Tbsp. all-purpose flour
- 1/4 c. butter or margarine
- 3 large eggs
- 1 c. milk
- 1 1/2 tsp. ground cinnamon
- unsweetened whipped cream (optional)
Directions

1Cook carrots in boiling salted water to cover, 8 to 10 minutes or until tender; drain.

2Place carrots in food processor for 15 seconds.

3Add sugar and next 5 ingredients and process until smooth, stopping once to scrape down sides.

4Pour mixture into 6 lightly greased 8 ounce baking dishes.

5Place on a baking sheet and cover with foil.

6Bake at 350° for 15 minutes.

7Remove from oven, uncover and sprinkle with Pecan Topping.

8Bake 20 minutes. Serve with whipped cream, if desired.
