- 2 c milk
- 1 1/4 c sugar
- 6 Tbsp cornstarch
- 1 tsp salt
- 2 eggs
- 1/2 c coconut
- 1/4 tsp vanilla
- baked pie shell
- whipped cream
Directions

1Heat milk in a double boiler until hot.

2Do not boil.

3Combine sugar cornstarch and salt in a mixing bowl.

4Add hot milk, beat for 1 minute or until smooth.

5Add eggs and mix will.

6Pour mixture back into double boiler.

7Stir occasionally until mixture begins to coat the sides of the pan, then stir constantly until thick.

8Place in mixer bowl and add coconut and vanilla.

9Beat on medium speed until cool.

10Pour into pie shell and top with whipped cream. Refrigerate.
