  • 2 c. milk
  • 2 egg yolks
  • 1 c. sugar
  • 2 1/2 to 3 Tbsp. cornstarch
  • 1/4 tsp. salt
  • 1/4 c. milk
  • 1 tsp. flavoring
  • 1/2 c. coconut
  • 1 Tbsp. margarine

Directions

    Heat 2 cups milk on simmer while mixing egg yolks, sugar, cornstarch, salt and milk.

    Mix well, add to milk, stir constantly.

    When thick, add flavoring, coconut and margarine; cook until blended.

    Place in cooked pie shell, add meringue, bake about 15 minutes at 375° or until meringue is browned to your liking.
