Ingredients

  • 3/4 c. sugar
  • 1/4 c. cornstarch
  • 1/4 tsp. salt
  • 2 c. milk
  • 3 egg yolks
  • 2 Tbsp. margarine
  • 1 tsp. vanilla
  • 1 c. coconut
  • 1 baked (9-inch) pie shell
  • 1 c. whipping cream
  • 1/4 c. sifted powdered sugar
  • toasted coconut flakes for garnish

Directions

    Combine first 3 ingredients in saucepan; gradually stir in milk.

    Cook over medium heat, stirring constantly, until thickened and bubbly.

    Cook 1 minute.

    Beat yolks; gradually add some hot mixture into yolks.

    Add to remaining hot mixture, stirring constantly.

    Cook, while stirring, for 30 seconds.

    Remove from heat and stir in margarine, vanilla and coconut.

    Pour.

    Cool. Refrigerate 1 to 2 hours.
