- 1/4 c all-purpose flour
- 1 c sugar
- dash salt
- 2 c milk
- 3 egg yolks, beaten
- 1 1/2 t vanilla
- 1 1/3 c flaked coconut, divided
- 1 pie shell, 9 inch, baked
Directions

1In a saucepan, combine flour and sugar; add salt, milk and egg yolks.

2Mix well.

3Cook over medium heat, stirring constantly until mixture is thickened and bubbly.

4Reduce heat; cook and stir 2 minutes more.

5Remove from the heat; stir in vanilla and 1 c coconut.

6Pour hot filling into pie shell.

7Spread meringue over hot filling.

8Sprinkle remaining coconut over meringue.

9Bake at 350 degrees for 12-15 minutes or until golden.

10Cool.

11Store in the refrigerator.
