  • 3/4 c. sugar
  • 3 eggs
  • 1/2 c. buttermilk
  • 1/2 stick soft margarine
  • 1 c. flaked coconut
  • 1 tsp. vanilla

    Mix margarine and sugar; cream well. Add eggs, one at a time, then buttermilk.

    Pour into 9-inch deep dish pie shell. Bake at 275° to 300° for 45 minutes.
