- 6 Tbsp. cornstarch
- 1 1/2 c. sugar
- 6 egg yolks
- 4 c. milk
- 2 tsp. vanilla
- 2 c. coconut
- 3 Tbsp. margarine
Directions

1Mix all ingredients except for the coconut.

2Cook in the top of a double boiler until thick (at least 20 minutes), then add coconut and let cook a little longer. Pour in two 9-inch prebaked pie shells or graham cracker shells.

3Beat egg white and 2/3 cup sugar until stiff and spread on pies.

4Sprinkle coconut on top and brown lightly.
