Coconut Pie

- 4 eggs
- 2 1/2 cans cream
- 2 1/2 c. sugar
- 1 Tbsp. vanilla flavoring
- 4 c. fresh frozen coconut
- 2 precooked deep-dish pie shells
Directions

1Separate eggs and set egg whites aside.

2Mix together eggs, cream, sugar and vanilla flavoring.

3Cook on top of stove until boiling starts. Stir constantly!

4Add fresh coconut.

5If not thick enough, add pinch of flour mix with water.

6This will thicken the mixture. (Do not let the pie filling boil because eggs will cook.) Pour filling in pie shells.

7Take egg white and 1/2 cup of sugar.

8Beat until stiff.

9Put on top of pie and brown quickly in oven.
