  • 3 pounds round roast of beef
  • 2 cups dry red wine
  • 2 to 3 tablespoons red wine vinegar
  • 3 tablespoons brown sugar
  • 1/4 cup tomato puree
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon Worcestershire sauce
  • 2 teaspoons dry mustard
  • 2 teaspoons soy sauce
  • 1 teaspoon ground cloves
  • 8 crushed gingersnaps
  • 2 cups beef broth
  • 2 onions, thinly sliced

    Combine all ingredients except beef to form marinade.

    Marinate beef for two to three days.

    Cook meat in marinade on top of stove over low heat in heavy covered pot, about two to two-and-a-half hours or until tender.
