- 1 (9-inch) baked pie crust
- 4 Tbsp. sugar
- 5 Tbsp. flour
- 1/4 tsp. salt
- 2 c. milk
- 3 egg yolks
- 1 c. flake coconut (Baker's)
- 2 tsp. vanilla
- 1 Tbsp. margarine
- 3 egg whites
- 6 Tbsp. sugar
- 1/2 c. flake coconut
Directions

1Combine sugar, flour and salt in the top of a double boiler. Add milk and egg yolks, beaten together. Cook over boiling water for 10 minutes or until thick, stirring constantly. Remove from water; add 1 cup coconut, vanilla and margarine. Pour into a baked pie crust. Beat egg whites until foamy. Add sugar (1 tablespoon at a time), beating until sugar is blended and mixture stands in a peak. Bake at 350° for 15 minutes or until browned.
