  • 1 (9-inch) baked pie crust
  • 4 Tbsp. sugar
  • 5 Tbsp. flour
  • 1/4 tsp. salt
  • 2 c. milk
  • 3 egg yolks
  • 1 c. flake coconut (Baker's)
  • 2 tsp. vanilla
  • 1 Tbsp. margarine
  • 3 egg whites
  • 6 Tbsp. sugar
  • 1/2 c. flake coconut

    Combine sugar, flour and salt in the top of a double boiler. Add milk and egg yolks, beaten together. Cook over boiling water for 10 minutes or until thick, stirring constantly. Remove from water; add 1 cup coconut, vanilla and margarine. Pour into a baked pie crust. Beat egg whites until foamy. Add sugar (1 tablespoon at a time), beating until sugar is blended and mixture stands in a peak. Bake at 350° for 15 minutes or until browned.
