  • 3 eggs
  • 1/4 c. plus 2 Tbsp. butter or margarine, melted
  • 1 1/2 c. sugar
  • 1 c. flaked coconut
  • 3 Tbsp. all-purpose flour
  • 1 (15 1/4 oz.) can crushed pineapple, drained
  • 1 unbaked (9-inch) deep dish pastry shell

    Beat eggs at medium speed with electric mixer until thick and lemon colored.

    Add butter and next 4 ingredients.

    Mix well. Pour into pastry shell.

    Bake at 350° for 50 minutes or until filling is set.
