Coconut Pound Cake

- 2 1/2 c. sugar
- 1 1/2 c. Crisco or other white shortening
- 5 eggs
- 3 c. plain flour
- 1 tsp. baking powder
- 1/2 tsp. salt
- 1 c. milk
- 1 tsp. vanilla extract
- 1/2 tsp. almond extract
- 1 (7 oz.) can flaked coconut
Directions

1Preheat oven to 300°.

2Cream sugar and Crisco.

3Add eggs, one at a time, beating after each addition.

4Sift together flour, baking powder and salt.

5Add alternately milk and the flour mixture to creamed mixture.

6Lastly, add vanilla extract and almond extract and fold in contents of coconut.

7Bake in greased and floured large tube pan for 1 1/2 hours at 300° or until cake tests done.

8Cake makes its own topping.
