- 2 sticks margarine
- 2/3 c. solid vegetable shortening
- 3 c. sugar
- 5 eggs
- 3 c. all-purpose flour
- 1/2 tsp. baking powder
- 1 tsp. salt
- 1 c. buttermilk
- 1/2 tsp. baking soda
- 1 tsp. vanilla
- 1 c. coconut
Directions

1Preheat oven to 325°.

2Cream margarine, shortening and sugar. Add eggs, one at a time, beating well after each addition. Combine dry ingredients and add alternately with buttermilk and vanilla, ending with flour.

3Fold in coconut.

4Bake in a 10-inch well greased tube pan or use a Bundt pan and bake remaining batter in a small pan for the family.

5Bake 1 hour in a Bundt pan or about 1 hour and 15 minutes to 1 hour and 30 minutes in a tube pan.

6Cool in pan 10 minutes before turning out.
