Coconut Pound Cake

  • 1 c. butter, softened
  • 2 c. sugar
  • 5 eggs
  • 3 c. sifted flour
  • 1/4 tsp. salt
  • 1 c. milk
  • 1 (3 1/2 oz.) can flaked coconut
  • 1 tsp. lemon extract
  • 1/2 tsp. vanilla

    Cream together butter and sugar.

    Add eggs, one at a time, beating well after each addition.

    Sift flour with salt.

    Add flour alternately with milk to creamed mixture, beating after each addition.

    Add coconut, lemon and vanilla flavorings.

    Pour into a greased and floured pan.

    Bake at 325° for 1 1/2 hours or until cake is done.

    Cool 10 minutes then remove.
