  • 1 c. Wesson oil
  • 2 c. sugar
  • 5 whole eggs
  • 2 c. all-purpose flour
  • 1 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1 c. buttermilk
  • 1 1/2 tsp. coconut flavoring
  • 1 can flaked coconut

Directions

    Cream shortening and sugar together; add one egg at a time and beat well.

    Sift flour, baking powder and salt.

    Add buttermilk and flour alternately and mix well.

    Add coconut flavoring and coconut.

    Bake in a stem pan at 350° for 50 minutes.
