Coconut Pudding Pie

- 1/4 c. margarine (1/2 stick)
- 1 c. sugar
- 2 eggs
- 1 c. milk
- 1/4 c. self-rising flour
- 1/2 can (3 1/2 oz.) flaked coconut
- 1 tsp. vanilla
Directions

1Heat oven to 350°.

2Lightly grease a 9-inch pie pan.

3Set aside.

4In the bowl of mixer, cream margarine and sugar until light and fluffy.

5Add eggs, one at a time, beating well after each addition.

6Add milk and flour and blend well.

7Add coconut and vanilla and mix.

8Pour into prepared pie pan.

9Bake 45 minutes or until set.

10Serves 6 to 8.
