  • 1 c. raisins
  • 3 c. flour
  • 1 c. sugar
  • 1 Tbsp. baking powder
  • 1 c. coconut
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract
  • 1 egg
  • 3/4 c. milk
  • 3/4 c. water

Directions

    Preheat oven to 350°.

    Grease and flour loaf pan. Toss raisins in the flour. Add sugar and baking powder, then mix.

    Add coconut, vanilla extract, almond extract, egg, milk and water.

    Mix by hand until blended.

    Pour into loaf pan and bake for approximately 1 hour and 10 minutes.
