- 1 c. raisins
- 3 c. flour
- 1 c. sugar
- 1 Tbsp. baking powder
- 1 c. coconut
- 1 tsp. vanilla extract
- 1 tsp. almond extract
- 1 egg
- 3/4 c. milk
- 3/4 c. water
Directions

1Preheat oven to 350°.

2Grease and flour loaf pan. Toss raisins in the flour. Add sugar and baking powder, then mix.

3Add coconut, vanilla extract, almond extract, egg, milk and water.

4Mix by hand until blended.

5Pour into loaf pan and bake for approximately 1 hour and 10 minutes.
