- 1 can refrigerated crescent rolls
- 4 eggs, slightly beaten
- 1/2 cup evaporated milk
- 1 Tbsp. parmesan cheese
- 1/4 cup chopped green onions
- salt and pepper to taste
- 1-1/2 cups grated Cheddar (may substitute Mozzarella)
- 1/2 lb. boiled shrimp or crawfish tails, cut into small pieces
Directions

1Separate triangles of rolls and place 5 in a 9 inch pie pan pressing seams together to form a crust.

2Combine remaining ingredients and pour

4Roll out remaining triangles. Cut in 1/2 inch strips and make lattice effect on top of quiche. Bake at 325 degrees 50-60 minutes.
