- 1/2 cup jasmine rice
- 2 cups whole milk
- 2 cups coconut milk
- 1 cup granulated sugar
- 2 tablespoons raisins
- 1/2 teaspoon vanilla extract
- 1/4 cup sweetened coconut flakes
Directions

1Wash rice thoroughly in several changes of water, put in a deep pot.

2To rice in pot, add milk and coconut milk, bring to a boil over medium-high heat.

3When it reaches a boil, lower the temperature and cook milk gently on low heat.

4Allow it to simmer & bubble for one hour, or just until rice is cooked/tender and the milks have thickened to a slightly pudding-like consistency.

5Stir in the sugar and vanilla; combine thoroughly, simmer again for about 5 minutes.

6Distribute pudding into four serving dishes, and garnish with raisins and coconut flakes.
