Coconut Rice Pudding

  • 1/2 cup jasmine rice
  • 2 cups whole milk
  • 2 cups coconut milk
  • 1 cup granulated sugar
  • 2 tablespoons raisins
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sweetened coconut flakes

Directions

    Wash rice thoroughly in several changes of water, put in a deep pot.

    To rice in pot, add milk and coconut milk, bring to a boil over medium-high heat.

    When it reaches a boil, lower the temperature and cook milk gently on low heat.

    Allow it to simmer & bubble for one hour, or just until rice is cooked/tender and the milks have thickened to a slightly pudding-like consistency.

    Stir in the sugar and vanilla; combine thoroughly, simmer again for about 5 minutes.

    Distribute pudding into four serving dishes, and garnish with raisins and coconut flakes.
