  • 1 cup sugar
  • 4 separated eggs
  • 1 cup plain flour
  • 2 tsp baking powder
  • 125g melted butter
  • Grated rind & juice of one orange
  • 3/4 cup of orange juice (to pour on cake when cooked)
  • 2 tbs sugar

Directions

    1) Beat sugar & yolks until thick & pale.

    2) Sift flour and baking powder & fold into yolks, then fold in the butter, rind & juice of an orange and stiffly beaten egg whites.

    3) Put in greased tin & bake @ 180 degrees for 35-40min.

    4) Remove from oven. Let cool slightly and then turn out cake from pan.

    5) Combine the orange juice & sugar until dissolved. Put cake back into pan while still quite warm & pour over juice mixture, allowing it to soak into the cake.

    6) Either dust cake with icing sugar when cool or ice using icing sugar & orange juice to make a runny icing.
