  • 1-1/2 cup oil
  • 1 cup flour
  • 1 cup beer
  • 14 oz. desiccated coconut
  • 1 lb. prawns, shelled and cleaned

Directions

    Pour oil into large fryer and heat to 375F.

    Mix together flour and beer until it makes a batter.

    Coat shrimp in batter, then roll in coconut.

    Fry shrimp in small batches approximately 2 to 3 minutes until golden and curled.

    Drain on paper towels.
