  • 1 c. vegetable oil
  • 1 c. firmly packed brown sugar
  • 1 c. sugar
  • 2 eggs
  • 2 1/2 c. all-purpose flour
  • 1/2 tsp. salt
  • 1 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 c. buttermilk
  • 1 tsp. vanilla
  • 1 c. flaked coconut
  • 1 c. pecans

Directions

    Combine first 3 ingredients and beat well. Add eggs, one at a time, beating well after each addition.

    Combine flour and next 4 ingredients. Add to creamed mixture alternately with buttermilk, beginning and ending with flour mixture.

    Stir in vanilla, coconut and chopped pecans. Pour batter into 2 greased 9-inch round cake pans. Bake at 350° for 25 minutes. Cool cake layers in pans for 10 minutes.

    Remove and frost.
