- 2 Tbsp. butter
- 1 c. sugar
- 4 egg yolks
- 3/4 c. ground coconut
- 1 c. milk
- 1/3 c. lemon juice
- 1 tsp. grated lemon rind
- 1/4 tsp. salt
- 2 Tbsp. flour
- 4 egg whites
Directions

1Preheat oven to 375°.

2Grease a 10 x 6-inch Pyrex pan or a 1 1/2-quart casserole dish.

3Cream butter.

4Add sugar gradually. Cream until light and fluffy.

5Add yolks and beat well.

6Add lemon juice, rind and salt.

7Blend in.

8Fold in coconut, flour and milk. Beat egg whites until very stiff and carefully fold into yolk batter until no egg white shows.

9Pour into the prepared pan.

10Set in a pan of hot water in a 375° oven.

11Bake for 35 to 40 minutes. Serve warm at room temperature or chill, if desired.

12Garnish with whipped cream and toasted coconut.
