  • 1 1/3 c. oil
  • 5 eggs
  • 2 c. pureed squash
  • 2 c. flour
  • 1 tsp. salt
  • 2 c. sugar
  • 1 tsp. cinnamon
  • 1 tsp. nutmeg
  • 1 tsp. soda
  • 2 (3 oz.) pkg. coconut pudding and pie filling mix
  • 1 c. favorite chopped nuts

    Beat oil, eggs and squash together.

    Sift next 6 ingredients together; stir in pudding mixture and add nuts.

    Add to pumpkin mixture; mix until well moistened.

    Place batter in well-greased 8 1/2 x 4 1/2-inch loaf pans.

    Bake in preheated 350° oven for 1 hour or until bread tests done.
