Ingredients
- 4 pounds center cut cod, on the bone, but cut off 1-inch of the belly to make the saddle stand sturdily
- 4 cloves garlic
- Salt and freshly ground black pepper
- Olive oil
- 1 tablespoon butter
- 1 tablespoon oil
- 1 shallot, chopped
- 1 pound chanterelles, cleaned
- Salt and pepper
Directions

1Preheat the oven to 425 degrees F.

2Make slits with the tip of a knife all over the cod.

3Slice the cloves of garlic and press them in slits.

4Season with salt and pepper, place on a baking tray or roasting pan and drizzle with olive oil.

5Roast in the oven for approximately 45 minutes.

6When it easily comes off the bones, it is done.

7Remove the cod from the oven and set aside while you prepare the chanterelles.

8Heat a saute pan over high heat.

9Add the butter and the oil and heat.

10Add the shallots and saute for 1 minute.

11Add the chanterelles and cook until they are tender and have given up their liquid.

12Season with salt and pepper and serve with the cod.
