Cod Fish Rice

Ingredients

  • 400 grams cod already soaked and separated in small slices
  • 1/2 onion small
  • 3 garlic cloves
  • 1/2 red pepper
  • 1/4 savoy cabbage
  • olive oil as needed
  • 2 cups rice
  • 3 tablespoons tomato paste
  • 5 coriander branches
  • salt as needed

Directions

    In a pan with boiling water, add the cod and cook for 3 to 4 minutes.

    Remove the cod, and save the water.

    In a saucepan, stew the onion, garlic, pepper, and cabbage.

    Sprinkle with olive oil, and let cook until the onion is transparent.

    Add the rice, and fry for 1 or 2 minutes.

    Add the water saved from cooking the cod, which should be boiling, the tomato pulp, and bring to a boil.

    When the rice is almost ready, add the cod, and mix.

    Garnish with coriander leaves.

    Serve immediately.
