- 1 large onion, thinly sliced
- 1 cup red wine
- 14 cup balsamic vinegar
- 1 teaspoon sugar
- salt, pepper
- 12 ounces cod, skinless
- 34 cup heavy cream
- 1 egg white
- salt, pepper
- cooking spray
Directions

1preheat oven to 325.

2in a pan over medium heat, combine onion, wine, vinegar, salt, pepper.

3simmer 15 minutes until reduced, remove from heat.

4spray 4 ramekins.

5put cod, cream, egg white, salt& pepper in a blender, process until smooth pour into ramekins until half full.

6place ramekins into a large baking dish, fill with water halfway up the sides bake for 20 minutes or until set.

7spoon some onion onto 4 plates.

8unmold flans on top of onions.

9garnish with more onions and fresh sprigs of herbs.
