  • 3 3/8 tablespoons olive oil
  • 1 onions chopped
  • 1 garlic cloves minced
  • 1/2 can diced tomatoes
  • 1 bay leaf
  • 1 red pepper chopped and seedless
  • 3 cups water
  • 9/16 pound pasta thick macaroni
  • 2 slices unsalted cod cut in bite-size pieces
  • salt to taste
  • 1 parsley sprigs chopped

Directions

    Heat olive oil in a large saucepan over medium heat.

    Add onion and garlic and cook for a few minutes.

    Add the tomatoes and bay leaf.

    Add the red pepper and cook briefly.

    Add water and bring to a boil, then add pasta.

    Stir well.

    Simmer for 5 minutes and add cod.

    Season with a pinch of salt and continue to simmer until pasta is tender.
