Ingredients
- 3 3/8 tablespoons olive oil
- 1 onions chopped
- 1 garlic cloves minced
- 1/2 can diced tomatoes
- 1 bay leaf
- 1 red pepper chopped and seedless
- 3 cups water
- 9/16 pound pasta thick macaroni
- 2 slices unsalted cod cut in bite-size pieces
- salt to taste
- 1 parsley sprigs chopped
Directions

1Heat olive oil in a large saucepan over medium heat.

2Add onion and garlic and cook for a few minutes.

3Add the tomatoes and bay leaf.

4Add the red pepper and cook briefly.

5Add water and bring to a boil, then add pasta.

6Stir well.

7Simmer for 5 minutes and add cod.

8Season with a pinch of salt and continue to simmer until pasta is tender.

9To serve, sprinkle with chopped parsley.
