- 2 teaspoons olive oil
- 4 6- to 8-ounce fillets of cod
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 cup mushroom broth (reserved from ragout recipe above)
- 2 cups mushroom ragout
Directions

1Warm the olive oil in a skillet over medium heat.

2Add the cod, sprinkle with salt and pepper and cook for 3 minutes.

3Add the broth.

4Spread the mushroom ragout evenly over the fillets.

5Reduce heat, cover and simmer until the fish is completely cooked, 8 to 10 minutes.
