Codfish Casserole

Ingredients
- 2 c. shredded codfish
- 1 2/3 c. milk
- 2 beaten eggs
- 1 c. dry bread crumbs
- 2 Tbsp. melted butter or fortified margarine
- 1/2 c. grated cheese
- 1 Tbsp. chopped onion
- 1 Tbsp. chopped green pepper (optional)
- 1/2 c. buttered crumbs
Directions

1Let cold water run over fish for 15 minutes.

2Cover with cold water and heat slowly to boiling, but do not boil.

3Drain and repeat process once more.

4Combine fish and remaining ingredients except buttered crumbs.

5Pour into greased 1 1/2-quart casserole. Top with buttered crumbs.

6Bake in pan of hot water at 350° for 40 minutes.

7Serve with egg sauce.
