  • 3/4 cup butter soft
  • 7/8 cup sugar
  • 1 tablespoon instant coffee
  • 2 tablespoons hot water
  • 3 eggs
  • 1 2/3 cups flour
  • 1 teaspoon baking powder
  • 1 pinch salt
  • 3 1/2 ounces toasted hazelnuts

    Preheat the oven to 190C.

    Line a rectangular cake pan, 15 x 25 cm, with parchment paper.

    Beat the butter and sugar in a bowl until smooth and creamy.

    Add the eggs, one at a time, stirring well in-between.

    Dissolve the coffee in the hot water and leave to cool.

    Sift the flour, baking powder, and salt over the mixture of butter and eggs.

    Mix all the ingredients together with a spatula until completely blended.

    Add the cold coffee to the mixture and gently mix in.

    Transfer the mixture to the cake pan.

    Sprinkle the hazelnuts over the surface.

    Cook for 20 minutes or until a toothpick inserted in the center comes out clean.
